Avocado fries/avocado wedges are ready-to-eat avocados (not too mushy, not too hard) which are fried, either in panko crust or tempura style.
If one wants to avoid frying the batter-dipped wedges, they can be air-fried as well. The seasoned crust provides all the taste and crunch first and then comes the creaminess of the avocado.
Restaurants in Hyderabad introduced these fries as a healthy alternative option for vegetarians. The food industry is always looking to innovate. As a result, chefs do a lot of brainstorming with their teams.
Prabhjoth Bhargava, co-founder of the vegetarian cakery Sozo, says, “We wanted to offer more than regular fries. Avocados are consumed widely now in Hyderabad. Apart from being healthy, the butter fruit is tasty. So we decided to work on it. If there can be zucchini and broccoli fries, there can be avocado fries as well. We decided to do it in tempura style for diners to enjoy the avocado and not have to eat a lot of crust.”
Prabhjyot says the trick to a good avocado wedge is a perfectly ready fruit. “For ideal avo fries, selecting the perfect avocado is the trick. We source the avocados twice a day to avoid getting a fruit that is too soft or hard,” adds Prabhjyot.
