Padma Lakshmi recently shared an easy hack for cutting hasselback potatoes. This makes the slicing process much easier. The hasselback potato recipe requires careful slicing of the spuds into thin layers to keep them connected at the base. When baked, the layers spread out into a crispy disc, but the center remains soft and creamy. It’s a delicious option if you’re stuck in a rut and looking for a new way to cook starchy roots. The only troublesome part? I cut it out and made it into an accordion-like design.
“Two wooden spoons or utensils should have handles of the same height and dimensions, so you get an even cut and don’t damage the bottom when cutting down. This is what creates such fans,” Lakshmi said in a clip posted on Instagram.
Now move on to the remaining steps to make the hasselback potatoes. Brush with a fat such as butter or olive oil and bake until crispy on the outside and soft in the center.
Lakshmi adds that once you take the hasselback potatoes out of the oven, you can stuff a lot of filling into the cut. You can also treat it like a hearty baked potato and stuff it with sour cream, green onions, cheddar cheese, and bacon. You can also top it with a rich hollandaise sauce or spoon over some chili crisps for added spice.
